Perhaps the Bible of fermentation?  Covers the gamut from history to philosophy to science to the art of fermentation, this book demonstrates the variety of ways people around the world have preserved foods in creative and practical ways.  I can't wait to try my hand at sauerkraut and kombucha!

Intriguing! Does it cover drinks as well as foods?

Yes! Drinks of all sorts - things you have heard of like beer and wine and kombucha - and things you may not have such as shrub and kvass. Also kombucha mother candy, anyone?
