The 2019 Craft Brewers Conference will be taking place in Denver April 8-11 at the Colorado Convention Center, and though this meeting is for craft brew professionals, we've been able to snag a couple of beer luminaries willing to share their brewing secrets! On April 9, 6:30-7:45 p.m., Dick Cantwell (Elysian/Magnolia Brewing) and Peter Bouckaert (New Belgium/Purpose Brewing) will be at the Park Hill Library discussing their collaboration, Wood and Beer: a Brewer's Guide.
This book is dedicated to all the magic that happens between wood and the various microbes that make sour beer sour, and includes not only the history, physiology, microbiology, and flavor contributions of wood but also the maintenance of wooden vessels. Cantwell and Bouckaert will also discuss wood as a vehicle for contributing complexity to beers fermented and aged within it.
